Baking With Eddie: 'Experimental' Sponge Cakes!

I thought that I’d share a little easy recipe that I put together, not so long ago which I adore so much! Sponge cakes are really easy to experiment with and I got so bored of just making sponge cakes, but they are really common - so this is a recipe that you could try out yourselves or give you some inspiration when baking!

You will need:

  • 200g Caster Sugar
  • 200g Butter (at room temperature - this makes it easy to mix!) 
  • 200g Self Raising Flour
  • 2 Eggs
  • Chocolate fingers
  • Chocolate chips (Add as many as you want, why the hell not?! haha)

The Fun Part:

1. Pre-heat oven at 190 degrees (Gas mark 5!)
2. Mix the butter and sugar until soft.
3. Add one egg and half of the flour and mix (when you have mixed this, then add the other egg and the rest of the flour and mix again!)
4. (You could also melt them in the microwave) Melt your chocolate fingers in a bowl, on top of boiling water until smooth and bumpless (or any other chocolate, you want instead or as well as the chocolate fingers - and once melted, add into the mixture and stir!)
5. This is the time, where you add your chocolate chips and mix it all together!

6. Put equal amounts of the mixture into each case and put into the oven for 20 minutes - reduce the amount of times that you open the oven, whilst they’re cooking because with cakes, every time you do open the oven, then they rise down and this is not what we want! This will also increase the time that they will take to cook :) (I normally just open it quickly, half way through to check how they’re doing)
7. *20 minutes later!* Take them out of the oven and I always insert a knife into each one, cleaning after everyone and if the knife comes out clean, then this means they are definitely cooked! :)
8. Let them cool, grab a hot drink and enjoy!
